Over the past decade, Shadi Bee has worked as a retreat chef for dozens of wellness retreats, transformational gatherings, luxury mountain retreats, creative immersions, and intimate group experiences throughout Colorado and beyond.

Her approach goes far beyond simply feeding guests. Each menu is intentionally crafted to support the overall rhythm, atmosphere, and vision of the retreat itself. From nourishing brunches after yoga sessions to beautiful candlelit dinners following workshops, ceremonies, or long days outdoors, the food becomes part of the experience guests remember most.

As the founder of Vital Fungi and a culinary mycologist focused on ethnomycology, Shadi brings a unique perspective to functional mushroom cuisine. She has spent years studying the culinary, cultural, and traditional uses of mushrooms from around the world and thoughtfully incorporates them into retreat dining experiences.

Functional mushrooms may appear in broths, adaptogenic beverages, cacao blends, soups, sauces, desserts, or wellness-focused meals designed to support nourishment and vitality. Her approach is grounded in flavor first — creating dishes that are both delicious and intentionally crafted.

Functional Nutrition & Kitchen Herbalism

With a background in herbalism and functional foods, Shadi approaches retreat cuisine through the lens of nourishment, balance, and vitality. Herbal infusions, mineral-rich ingredients, adaptogenic herbs, fresh spices, and nutrient-dense meals are naturally woven into her menus.

She studied Ayurvedic cooking and Indian cuisine with Vasant Lad and Usha Lad in 2008, experiences that helped shape her understanding of food as an important part of wellness and daily ritual.

Her cooking philosophy blends global culinary inspiration with modern wellness practices, creating meals that feel comforting, vibrant, and deeply nourishing.

Shadi has extensive experience creating gluten-free and allergen-conscious retreat menus without sacrificing flavor, creativity, or beauty. She works comfortably with a wide range of dietary needs including vegan, gluten-free, dairy-free, and refined sugar-conscious menus.
